These are truly the chewy chocolate chip cookies of dreams, and everyone in my house goes crazy for them. They're easy to make and store, and finish baking in around 8 minutes. This recipe makes around 8 cookies if you use generous tablespoon scoops.
Ingredients:
-200g unsalted butter
-240g dark brown sugar
-300g all-purpose flour
-1 tsp baking soda
-3/4 tsp sea salt
-1 tsp vanilla extract
-1 egg & 1 egg yolk
-180g dark chocolate chunks
Directions:
Preheat oven to 190c/375f.
Melt butter, mix in brown sugar in large bowl. Let sit for 5 minutes.
Add vanilla extract, egg and egg yolk, then mix.
Pour flour, baking soda, and sea salt into a bowl. Sift into the wet mix, and mix.
Stir in chocolate chunks
Scoop into balls (size up to you, but make them uniform), place on baking sheet, and let sit for 15 minutes.
Bake for 8-9 minutes. Remove and rest until you're able to pick up cookies without them disintegrating.
Important notes:
Bake for a few minutes longer if you want crunchy cookies.
Use a scale to measure the flour and dark brown sugar! Makes a huge difference in the result. The unsalted butter is usually already in 200g packs, FYI.
