Restaurant Petrus at the Island Shangri-La: Gorgeous seasonal fare by chef Ricardo Chaneton

After a veritable shit storm of a week (and overall 2018 so far), I finally experienced something that made me hopeful for the new year. Not surprisingly, it revolved around food! Restaurant Petrus is located on the 56th floor of the Island Shangri-La, and we had a table right by the window overlooking the beautiful city. For dinner, Chef Ricardo Chaneton prepared a special seasonal menu for the four us, which took us through a gastronomic journey through comforting winter ingredients and flavours. See below for the dishes:

Carrot Salad

The appetiser was both refreshing on the palate and visually stunning on the eyes, showcasing a tastefully arranged plate of shaved carrot, beetroot, melting sea urchin and drops of ginger gel. The ginger gel was the surprising element that tied the various ingredients together.

Red Prawn Ravioli

I haven't had great ravioli lately, and this single delicious raviolo at Petrus basically made up for all those bad times. At Petrus, a juicy piece of red prawn is encased within a home-made ravioli, and bathed in a foamy bisque sauce that I ate up like soup. Nutty from the nuts, savoury from the bisque and sweet from the prawn. So on point.

Cauliflower Mousseline

Crispy smoked eel and a velvety American egg yolk shrouded by foamy cauliflower mousseline sauce, and topped with Oscietra caviar. What's not to love?

Meagre

A Mediterranean white meat fish also known as stone bass, the meagre was incredibly tender and flaked with a touch. I liked the minimalist presentation that showcased each ingredient in its raw, simple beauty, including the complementing side of grilled leeks and dollops of green sauce that was nicely tart and spiced.

Pigeon Pithivier

Pithiviers and tourtes are all the rage this season, with lovely renditions by Belon and Caprice making rounds on the media lately. I'm telling you now, this pigeon pithivier at Petrus is heaven! Chef Ricardo's pigeon pithivier was perfection, with a warm, crispy pastry stuffed with tender pigeon meat (that oozed juice when we cut through it) and creamy foie gras. On the side, a classic Madeira sauce to go with it.

For wine lovers...

On 18 January, Petrus will be hosting an evening with 4 Master Sommeliers, where guests can enjoy a special degustation menu by Chef Ricardo Chaneton.
